FAVORITE MORNING RITUAL :)
BREAKFAST...










Prepping this is simple...
1. a little butter or cooking spray in a pan med heat.
2. add sliced bell pepper, then mushrooms, then spinach and tomato...let that cook a couple of mins
3. add eggs this is 3 whites and 2 whole eggs 
4. added 1/4 avocado...and done!
For The Day...
2-3 hours later (snack) 1/2 grapefruit and 1hard boiled egg
2-3 hours later (lunch) yam and 1/2 the veggies and chicken
      (prepped last night)
2-3 hours later (snack) remainder of veggies and chicken
Dinner will be a SALAD...
It helps to pre cut some of the veggies whenever you are prepping other food so the salad only takes a minuet to throw together. Left Lindsey all set up to throw hers together quick and easy and since I knew I would be home late I packed mine to go...
(carrots, cucumber, celery, tomato, lentils and goat cheese) w/ balsamic vinegar and oil)

QUICK CREATIVE DINNER
I coached Lindsey through tossing this one together on her own tonight, since I didn't have time to prep. dinner this morning.


So quick and easy, definitely took less than 10mins.  There was a little turkey meat left from tacos a few days back mixed it with some black beans in a skillet for a couple mins. to heat.  cut half an avocado, 4 quick slices into a little tomato, a dollop of greek yogurt....and done!


Simple, delicious and perfectly healthy.


MEANWHILE...I prepped for tomorrow...
All I really did here was...
1.  turn oven on 375 degrees
2.  put a pot of water on to boil
3.  break the ends off asparagus     and put it in baking pan pour on a little oil and dash of salt and some garlic.
4.  rinse yams put a little oil on the skin and poke some holes in them 
5.  put asparagus and yams in the oven
6. put broccoli in boiling water
7. rinse chicken breast, squeeze lemon on it and a dash of salt and garlic, cut up some mushroom on it and add a little mint, since we had fresh herbs from our trip to the farmers market on Sunday :)
8. cleaned a bit while things were cooking (about 20mins)
9. when asparagus finished took it out put chicken in which was done along with the yams about 20 mins. later.


This works out as two meals for each of us for tomorrow.  I cut the large chicken breast into 4 pieces and put two slices, half the asparagus, a yam and half of the broccoli into a container for each of us.  A snack will be a slice of chicken with either asparagus or broccoli and for lunch, what's left with the yam.
