PREPPING... TUNA

Tuna is such a good food to include in your diet.  You will find I use it quite a bit so let's talk about how I make it.  I usually make extra, not too much because I don't like to have it for more than 3 or 4 days but enough to incorporate into my meal plan for the next couple of days (4 cans seems to be good for two people, 2-3 would be good for one).
I love and am an advocate of taking in as many fresh veggies as possible.  I find tuna to be a great place to add some in, so when making tuna I throw in what ever crunchy veggies I have available, today happened to be a lot (carrots, celery, cucumber, and red bell pepper) if you only have one or two things that's fine, it will still enhance the taste.  I don't like onions much but if you do, they would go well in here.  I also cannot stand mayonnaise and have found a much healthier alternative...greek yogurt, try it...soo good!  Also mix in mustard and a touch of balsamic vinegar... 
...and there you go...yummy, super healthy tuna.

  1. haha, I remember you don't like mayo, that's a crack up. Pretty neat idea subbing yogurt, I'll give it a shot, sounds good :)

  2. yup...still can't stand mayo (eeeewwwww)...lol. I love the Fage greek yogurt though, I use it in place of sour cream too, it's seriously even better! Tony and Stacy actually first introduced me to it :)...hope you enjoy...xo.
