PREPPING... Veggies

I find that it works great if I pre cut as many vegetables as possible to use throughout the week, this way they are easy to access and I am likely to use them more often.

Here are some veggies I try to keep available...

BELL PEPPER...

 









I love using bell pepper to add flavor and color to my meals!
It's great to munch on raw or  add into all kinds of recipes. 

CUCUMBER...
I like to keep cucumber handy to snack on or easily cut into a salad (these are persian cucumbers they are smaller and crunchier, I prefer this kind for snacking, but the larger ones are great too).

CELERY...
Celery is also great to have available for munching and salads.  I also often use it with peanut butter or humus for small meals.
