I promise this was very simple... I turned on the oven to 375, open a package of chicken breast, rinse them and place on the pan, chopped a clove of garlic (if that sounds like too much you could always buy pre minced garlic, personally I like chopping it), then put it on top with a somewhat random mixture from our $2 farmers market herb pack (I'm pretty sure this is mostly dill and parsley, you can season this how ever you like. I just recommend not using much salt), finally I squeezed half a lemon and a bit of balsamic vinegar over the top and put it in the oven for about 20 minuets...
Next I put 1 cup of rice and 3 cups of water in the rice cooker and flipped on...
Lastly I pack it all up...half the rice and chicken get put away...
I then split the remainder of the rice and chicken into two containers and added about 1/3 of a pack of frozen peas to each.
I didn't spend more than 20 minuets on this and now we have a super tasty healthy lunch, as well as extra chicken and rice pre prepped to use over the next couple of days.
